A Few Food Adventures

I know, I know another post about food, but at least these were good experiments in cooking.  I read an article on Yahoo about getting kids to eat more vegetables. And since I don't have kids, this seemed like a good way to sneak some past myself! This recipe caught my eye, Potato Nachos. All I could think were, Potato Skins with bacon bits, sour cream, cheese... YUM! Well they were pretty close, but according to the article subbing potato wedges for chips was a healthier option. Angie and I made them one night when I was over hanging out with her and Mini. They were fantastic...

My other mini cooking adventure was courtesy of a recipe from Whole Foods Website. Nothing too "granola" in this one, so I thought I would give it a try. Cheesy Lasagna Rolls souned very safe. I love Lasagna, but the time it has to cook is such a pain! These little guys only have to bake for 25 min! Each roll had ricotta, sauce, mushrooms, olives, sausage and zucchini. Fill it, roll it, bake it, EAT IT. Highly recommend...
